Squash Soup Recipe (Spleen Qi Boosting Soup)

Half one butternut squash and bake both sides, cut side down for 35-45 minutes at 375 degrees.

Peel and slice 5-6 apples and set aside

Mix 2 quarts of vegetable broth with 2 tbsp of Vegetable Better than Bouillon in a stock pot or crock pot

If you like sauté 1/2 onion in stock pot or crock pot

Cube or scoop cubed cooked squash into the stock, add apples and allow to simmer for 60-90 minutes or cook in a crock pot on low for 8 hours.

Let cool and blend or immersion blend till smooth well blended. Enjoy!
